主要研究领域

谷物功能性配料。主要从事于谷物蛋白质、膳食纤维以及功能性低聚糖等生物活性成分调节机体脂质代谢的研究;全麦食品加工过程中膳食纤维、酚酸类物质等介导面筋蛋白聚集态的研究。
